Macaroni and Cheese with Gruyere and Tomatoes from Andrea Meyers

Spaghetti with Garlic, Chard, & Pecorino-Romano Cheese from Kalyn's Kitchen

I'm excited to share another of my favorite meatless meals, and I especially love to make this combination of chewy whole wheat spaghetti with garlic, chard, and cheese in the fall when I still can get chard from my garden. I'm a huge fan of lentils in any recipe, but it was the creative title of "Not-Pockets" that first drew my attention to these Mushroom and Lentil Turnovers from Thursday Night Smackdown. Caprese Quesadilla with Tomatoes, Mozzarella, & Basil Mayonnaise from Cookin' Canuck

Fried Green Tomato Grilled Cheese from Life's Ambrosia

I've always had a hard time thinking about making fried green tomatoes early in the season because every green tomato is a potential ripe tomato if I can only be patient. Grilled Eggplant with Feta, Golden Raisins, & Mint from Nami Nami

Even as I'm writing this, I know there are some of you who are very suspicious of eggplant (or aubergine, as it's called in Europe.) Besides the fact that it sounds so delicious, I think I'm partly featuring this recipe so I can tell you how I never liked eggplant until I finally tried grilled eggplant.
