El Charro's Chilaquiles from Apron Strings

Donna and Anne from Apron Strings describe their recipe for Chilaquiles as an easy Mexican casserole that's perfect for Meatless Monday.   However, if it's swelteringly hot where you live, don't be too worried about that word casserole, because this spicy combination of tortilla chips, eggs, green chiles, cheese, corn, and enchilada sauce only needs a quick 20 minutes in the oven to melt the ingredients together.   Not only is this a delicious and flexible meatless recipe, but it's also a great way to use tortilla chips that are a little past their prime! ...more

This recipe for Seven Layer Tostadas may be my favorite of all the meatless dishes I've ever posted  on my blog.  The idea came from my love for Seven Layer Dip, something that always shows up every time my family has a party.  One day I thought to myself, "Why couldn't you use those same ingredients on a tostada?" and that's how this recipe was born. ...more

A few years ago a reader named Paula sent me this recipe for Spicy Red Lentil and Chickpea Stew, and since then I've made it over and over for parties, wedding showers, and just to have in the fridge for week-night dinners. Paula called this Moroccan Lentil Stew, and I'm not sure if the flavors here are really authentically Moroccan but the combination of spices in this dish is perfect.
