Cranberry Sauce Grilled Cheese

Tackling Thanksgiving leftovers seems inevitable.  Some dishes get completely devoured during the main event, while other always leave leftovers no matter how small a batch you make.  Cranberry sauce always falls in the latter category, I think.  I'm a cranberry sauce lover myself, happy to stir it into my morning oatmeal or yogurt for a holiday kick.  But this sandwich...it's my new favorite way to eat cranberry sauce....more

Roasted Garlic, Acorn Squash & Mushroom Enchiladas

Acorn Squash is my favorite squash. I do enjoy other squashes, but the flavor of acorn squash has a special place in my heart. I can't really pinpoint what my reason os for this love, but you'll just have to make more acorn squash and find out yourself! Maybe it's the seeds ... whenever I make acorn squash, I always rinse, dry and roast the seeds in a little garlic, chili powder and salt. They are amazing! ...more

Meatless Monday--Skillet Eggplant Parmesan

If you think you don't like eggplant or you're on the fence, I implore you to try this recipe.  Not only is it about as simple as it could be, it yields the most perfect late summer meal, as well.  It's got tomato sauce and gooey, melted, browned cheese, which automatically puts it in the comfort food category.  It also has fresh basil, which is one of my most favorite ingredients ever.  If you so chose to serve it over pasta, it's got that going for it, as well....more

Grilled Peach, Goat Cheese, and Arugula Salad Pizza

To make myself happy, I put out some food and decided I would make a simple dinner for the family that I could use for my guests as well. I had thought about making a basic pizza, as we love pizza and really have not had one in a while, but then I got creative, and things got more appropriate for a ladies night. I had some grilled peaches that I had planned to use for a salad, but our menu got moved around a bit, so I decided a pizza with peaches would go perfectly with some good friends and wine. I figured Little Miss Mixture would enjoy it as her dinner, as well. ...more

Ricotta Pancakes with Fresh Blueberry Sauce

Pancakes for dinner. These are words that make Little Miss Mixture very happy. Not a week goes by that she does not request this if posed the question “what do you want for dinner?” I have come to realize as much as breakfast is my least favorite meal. It is not that I do not like it, I have just never been a big breakfast person. This may in fact be her favorite meal of the day. Luckily for me, she will eat it any time of day....more

Grilled Fattoush : Meatless Monday

With the local produce starting to filtrate the markets I start to change over to my warm weather recipes. Warm weather recipes involve less using the stovetop and oven because when the Carolina heat hits the last thing a person wants to do is heat their house up more.  I like to have big salads and a lot of food made on the grill during this time of year....more
