Believe it or not, I had never made carnitas before this. I have no idea why, given that Mexican food and braised meat are 2 of my favorite things ever. Taqueria Style Guacamole

I want to wax poetic about this guacamole, but, well, my brain is beach mush. So please believe me when I say it is outstanding. It is a smooth guacamole, blitzed in the blender, and had more tomatillos in it than avocados, so you can count on it being quite tangy. Gringo Enchiladas

Enchiladas are ‘the best’.  Even at 17 I knew I could change a recipe and make it the way I like it.  For some reason I never liked enchiladas.  It turned out that it was the corn tortilla.  I switched it to flour tortillas and started making it my signature dish.  When  people would say that they really liked my enchiladas I’d say, with a big mile on my face, “It’s with flour tortillas”.  Then the person would look back at their plate and say “Ohhhh” as if that was ‘it’ and a great revelation. It made me feel good anyway.Now I have changed it again because I use whole wheat tortillas. There is a homemade enchilada sauce too but feel free to buy the canned sauce if you would prefer. The Mexican flavors are all here and they are delicious....more

Homemade Refried Beans – Slow Cooker

I feel very fortunate to have grown up in the southwest  Mexican foods like refried beans were in our family’s meal planning since the day I was born.  It never occurred to me that everyone was not eating enchiladas and tortillas.  I had a rude awakening when I moved to a small town in Georgia and there was not a tortilla anywhere or even a can of refried beans.  Granted this was many years ago, but I rolled up my sleeves and taught myself how to make tortillas and refried beans.  It was darn good, and in the words of my Georgia born mother-in-law, ‘If I do say so myself’.Now I have moved on from the original recipe and it turns out I have many different refried bean recipes.  This one is one of my favorties and I like the way you can use the crock-pot for ease of meal preparation.  Hope you can try it soon....more
