We had a spring snow yesterday in Edinburgh and were in need of a comforting and warming dish. This potato and leek soup was just the ticket. It's surprisingly simple with only 8 ingredients and you can have it on the table in about 30 minutes. When Meatless Monday also happens to be Christmas Eve, I'm guessing an easy slow cooker soup might be just the thing for busy cooks. This Slow Cooker Potato Soup from Budget Bytes is made from ingredients you probably keep on hand, and most people would gobble this up with no clue it was a Meatless Monday dinner. Beth did use a little chicken base to add flavor, but you can sub vegetable base if you prefer. She also used potatoes with skins (which look a little bit like ham in the photo) but if you have kids, the soup might be an easier sell without the potato skins.
