Roasted Cauliflower with Garlic and Herbs

Is cauliflower one of those vegetables you can take or leave?  That’s how I would have described this vegetable until I started roasting whole cauliflower heads basted with garlic and herbs.  Leaving the head of cauliflower intact helps you to keep the texture firm throughout the cooking process.  A garlic and herb infused olive oil bath adds all the flavor you could want.  It will take about an hour to roast, but the result is well worth it.  This is one vegetable that is sure to please the picky eaters in your life....more
