Spinach Salad

A traditional spinach salad with bacon, hard-cooked eggs, and onions. Such a classic and ever so satisfying. My mom got this recipe from one of her friends years ago and she has been making it ever since. It is requested at many family functions and a true crowd pleaser. ...more

Ratatouille

To be honest Ratatouille is not a dish that I am very familiar with but when I came across a recipe in Miss Dahl's Cookbook I knew I wanted to give it a try. My sister-n-law has been keeping our kitchen stocked this summer with fresh vegetables from her garden and this traditional French vegetable dish felt like the perfect way to use them up....more

Coconut Jasmine Rice

I blogged about this coconut rice a while back but as with many of my earlier post this one needed some updated photos, plus it deserves a spot all on its own. Grilled Creamed Corn

I have the ultimate summertime dish to share with you today. I saw this recipe in the Rachel Ray Magazine a while back and patiently waited until grilling season was upon us and fresh corn made its way to the Farmers Market before giving it a try. Roasted Cauliflower with Parmesan, Almond and Panko Topping

I recently purchased a head of cauliflower bigger than a bowling ball. It reminded me of the pictures you see of the blue ribbon winning gigantic squash in a state fair competition.  It was an enormous beauty and I knew I had to do something special with it....more

Twice Baked Potatoes – Vegan Style.

Twice Baked Potatoes are a great standby for company.  They are a special treat for your family too.  I can not count how many times I have pre-prepared twice baked potatoes and had them in the refrigerator when company came over.  All I have to do is slide them in the oven and visit with our guests.Although uncooked potatoes do not freeze at all, cooked ones do.  In fact this recipe comes out just like you had freshly prepared them.  All ingredients are put together and stuffed into the potato shell and then placed into the freezer.  Your side dish is all done until you are ready to bake them for the second time and then eat them....more
