Roasted Tomato Soup

Recently I received over two bushels of tomatoes from my aunt’s garden. I took a stab at canning and dwindled down the lot by over half with tomato sauce alone. I quartered and froze a number of them as well. A big bowel of Bruchetta, a few sandwiches and salads later… I still have tomatoes coming out of my ears....more

Roasted Chickpea Snack

Roasted Chickpea Snack is wonderfully addictive. And healthy, too! Crispy, crunchy and nutty. They are great as a snack or served with drinks. With high protein levels, low GI index and low in fat, they are perfect for weight watchers, diabetics and pretty much everybody else. Sweet or savory, any flavor combination will do. Curried Cauliflower

It’s September and I don’t know about you but I don’t need to look much further than my local grocery store for inspiration for dinner. A note about cauliflower; I don’t usually like it! I find the fumes that come off it when it’s cooking to be noxious but I digress! This recipe is ridiculously easy and it’s so delicious that I’ve found a way to eat cauliflower (besides in a soup); I don’t like not liking a vegetable, especially one with the healthy benefits of cauliflower....more

Garden-Inspired Cooking: Roasted Cherry Tomato Sauce

The first summer after we moved into our house, we had an amazing garden. Our second summer here, it was just okay. Our third, we managed to grow one or two things. Now, this is our fourth summer and all we’ve managed to grow well is weeds. We are great at weeds! I’m not really sure what happened to our gardening skills, but that’s beside the point. In fact, most all of that was just useless rambling....more
