My kids haven’t eaten a lot of brussel sprouts. This year I have it on my list of vegetables I would like us to eat a bit more. At this time of year a recipe with the word "Bake" in the title sounds really appealing, and this Roasted Veggie Rice Bake from My Kitchen in the Rockies made a perfect meal for Kirsten's family when they got home late from a soccer game. Kirsten had roasted the vegetables and assembled the dish earlier in the day, so she just popped it in the oven for a few minutes, and a perfect meatless dinner was on the table.
