Roasted Tomato Soup

Recently I received over two bushels of tomatoes from my aunt’s garden. I took a stab at canning and dwindled down the lot by over half with tomato sauce alone. I quartered and froze a number of them as well. A big bowel of Bruchetta, a few sandwiches and salads later… I still have tomatoes coming out of my ears....more

Potato and Leek Soup And A New Toy From Sainsbury

A basil plant! It cost us GBP1.19, which, we thought was reasonable, but that is assuming it doesn’t wilt within a week and the seedlings do continue to grow. It was an interesting experience for the both of us, primarily because we’ve never consumed anything freshly plucked from a plant, and also because we’ve never taken care of anything else other than ourselves....more

Gazpacho

I’m not a fan of uncooked tomatoes, in fact I will go so far as to pick every last one out of my dish if they’re in it. Despite my distaste for them, this Gazpacho somehow makes my  heart swoon. Summer’s nearing it’s end, but you still have time to make this amazingly refreshing dish. I served it with garlic bread. I recommend making it the day before and parking in the fridge for 24 hours. The longer it sits, the better it tastes! You’ll be using your food processor to do most of the chopping, so you can put this dish together in no time at all....more
