Spinach Quinoa Cakes

I have to admit, I was slightly skeptical about making this recipe because I had never tried Quinoa before and didn't like the taste of it when I boiled some up. That being said...these cakes are delicious and packed in protein at 11 grams! The calorie count is a little high because Quinoa is high in calories, but they are so filling that one cake is enough!...more

My own combo

So Jim, aka Mr.Juice, wasn’t interested in one this morning,so I made mine last night. This morning, I am enjoying the combo of kale, spinach, celery, strawberry, mango and blueberry, made with the press of my own little finger…lol. Well I immediately launched into a rant about how little time I had to get things done around here. How busy the holidays had been. How some nights I could barely get dinner to the table much less photograph it, write about it and get it up on the blog. Blah blah blah......more

Quick 'n' Easy: Quinoa and Indian spinach

A few nights ago I created such a yummy-licious dish. Again, it was developed based on what I already had on hand and was having a taste for. I had been craving Tandoor Chef Palak Paneer all week. Every time I opened the freezer it called to me. I held off eating it because I didn't want to be bloated from the high sodium content....more

December 8, I created this hot and very delicious meal for my lunch: spinach, wild rice, egg, onion, and shrimp sauteed in garlic and hot chili oil. This dish is full of heat! The rice helps temper the heat....more
