Oven-dried tomatoes: Amp up the flavor of off season fruit

Have you ever bought a tomato?  Sorry, dumb question.   Have you ever really tasted a tomato?  Not such a dumb question because most of the time tomatoes are the sideshow.  A little garnish for the burger or the salad.  And this is probably what’s best for our taste buds, because mass-produced tomatoes, especially the ones from Florida, are simply watered down, grainy versions of the real McCoy.  And gas is to blame....more

Pasta Salad with Fried Kale, Tomatoes, & Olives from Kalyn's Kitchen

At my house, the love for kale just keeps on growing, and recently, while experimenting in the kitchen, we discovered the technique of stir-frying kale for a version of sauteed kale that's a bit crisper and with more texture than the usual sauteed kale. This experiment with fried kale resulted in Whole Wheat Pasta Salad with Fried Kale, Tomatoes, and Olives, a salad I could easily make into a whole meal for a Meatless Monday lunch or dinner. ...more

A Pinch of This and a Dash of That... Pasta with Fresh Tomato

In the past, attempting to get my mother to tell me just what all went into making one of my favorite dishes I enjoyed while growing up at home, which were many, and how much she added of what, was more like having my teeth pulled without Novocain. Her answer was always the same, “Well, you know...a bit of this and some of that...a pinch, a handful, a spoonful, and taste it! Always taste what you are cooking.” So in order for me to learn how and what she did was to actually be there, in person, looking over her shoulder when she made it....more

Light Tomato Basil Quiche from Kitchen Parade

Every year in early September my garden reminds me to take advantage of the last days of summer by producing huge amounts of tomatoes and basil, and this Light Tomato Basil Quiche from Kitchen Parade looks like a perfect recipe to take advantage to the last days of summer. Alanna has made this a little lighter than some quiche recipes by using low-fat mozzarella, evaporated skim milk, and just enough eggs to hold it together. Looks like a perfect Meatless Monday dinner to me! ...more

Summer in a jar

I always think of homemade tomato juice as the essence of summer distilled in a jar: sweet, hot and thick as August humidity.    This year though, my girls and I are preserving special memories while we can up our garden produce.  Sweet memories of working and laughing together, doing something I’ve always loved, which they are now acquiring an appreciation for....more

Fresh Tomato Tatin

One of my favourite things about summer is all of the fresh local produce at the farmers market, so I tend to head down every Saturday morning. The market starts out slowly in the spring, with asparagus and then strawberries. By July, things pick up, with a flurry of new things every week. Out of all of the amazing produce, one of the things that I look forward to the most is the tomatoes. There is just something irresistible about field-ripened tomatoes that keeps me longing for them all year round.  ...more

Canning Tomatoes at Home

When it comes to tomatoes the canning possibilities are endless. Beyond the basic canned tomatoes in juice or water, there are tomatoes with peppers, those canned with garlic and basil, sauces and condiments—salsas, ketchups, barbecue, pizza and spaghetti sauce. One family could, if they’re like ours, eat a whole field of tomatoes—even if it's a small one—each year. And we almost do. ...more
