Winter squash is one of my very favorite comfort foods for fall, and I'm always looking for new ways to use it when it starts showing up in abundance in the market. This dish of Spiced Couscous with Acorn Squash and Kale from Vintage Mixer also has kale, another favorite of mine. This recipe sounds like a perfect Meatless Monday meal, and for people who love squash and kale like I do, I'd love this as a new Thanksgiving side dish. Becky is using chicken stock, but if you subbed that for vegetable stock, this dish could also be vegan.
