French Oven New Potatoes with Onion and Fresh Herbs

The amazing thing about food? Even when things are down it's always there for you. It makes you happy again. Hence the term comfort food. The crappy thing about it? After the whole unhappy ordeal you gain 10 pounds and need to buy new jeans. Of course you could just look at that as an excuse to shop more...


Anyway, enough about days of unhappiness! Bring on the food! So, I haven't been to inventive lately. I made some cream puffs for my cousin (and they were quite tasty... I snuck 2 or 3), but that was a family recipe. Not mine to give out. To bad so sad.


Tonight however, my grandmother handed me a bag of yellow new potatoes and said “find a way to make these”. The result? Me, walking outside, grabbing some fresh rosemary, then scouring the pantry for anything else useful. In the end I wound up with a stick of salted butter, salt, pepper, a white onion, and the fresh rosemary I picked to pair with my potatoes. Simple, but all in all it should be effective. I hope. The whole shebang has been prepped in a cast iron pot and and ready to head into a 375 degree oven for dinner. So.... I'll get back to you after dinner....


The food is eaten, table cleared, and dishes washed and put away. Now, I can officially say they are proven and tested. They were tender and buttery with a hint of onion and rosemary in each bite. The flavors were in no way overpowering. Making the potatoes a simple, yet scrumptious addition to the meal.


…........I just thought of something. We ate all the potatoes and forgot to take pictures. My bad*** 

Wait, low and behold i found leftovers in the fridge!!! (not because they weren't yummy i might add!)


French Oven New Potatoes with Onion and Fresh Herbs


2 lb yellow new potatoes


½ c butter


1 Tbs fresh rosemary or thyme


1 small yellow or white onion, thinly sliced


kosher salt


freshly cracked pepper



Preheat oven to 375 degrees.

While oven is preheating, place butter in a french oven or oven safe stock pot and allow to melt in oven. Do not burn. Remove from oven when melted and toss the potatoes and onions in the pot until fully coated in the butter. Add the rosemary and salt and pepper to taste. Give a few more tosses to incorporate. Place in oven for 45 min – 1 hr, stirring the potatoes about ever 15 min to re-coat in butter. When tender enough to break apart with fork, remove from oven and serve.
