[Editor's Note: I'm always on the lookout for great breakfast casseroles. When guests are in town, they allow me to assemble a breakfast dish, put it in the oven, and let it bake while I make coffee and maybe prep a fruit salad for the side. The more complete, the better, when it comes to these dishes, and this recipe from The Homesick Texan, complete with blueberries and sausage, sounds like it would definitely fit the bill for weekend entertaining. --Genie]

My grandma likes to say that I take simple things and make them all complicated. If that’s true, then she will not be surprised that I’ve taken my dad’s simple yet elegant dish and embellished it a bit. Much like regular French toast, French toast casserole is comprised of cooked bread that’s been soaked in eggs and milk. But instead of being pan fried, it’s baked. The inclusion of orange juice, fresh blueberries and spicy sausage also breathes life into this French toast casserole.

I was reading this recipe when my 8 year old popped over my shoulder and asked me if I can make this for dinner.....it looks so yummy. Thank you for sharing it....
