Fresh and Flavorful Mango Salsa

Mango Salsa 

 

With the arrival of spring and the weather starting to heat up here in Central Texas, it’s time to start grilling. This fresh and flavorful mango salsa goes great with grilled chicken, salmon, and fish tacos.

Mango Salsa

Serves 4

2 ripe mangoes, peeled, pitted, and diced (Ataulfo variety, if available)

3 tablespoons fresh cilantro leaves, chopped

2 tablespoons fresh mint leaves, chopped

2 tablespoons red onion, finely chopped

1 garlic glove, minced

1/2 Serrano pepper, finely minced

1/2 teaspoon fresh lime juice

1/2 teaspoon extra virgin olive oil

We prefer to use Ataulfo mangoes for their creamy texture and honey-sweet flavor. Simply combine the ingredients in a small mixing bowl and refrigerate until ready to use. Enjoy!
