Galbani Mozzarella Fresca is crafted here in the United States using Egidio Galbani’s original secret family recipe. Made in the fior di latte tradition from cow’s milk, our fresh mozzarella is gently stretched and kneaded through the Italian process known as pasta filata. This produces the uniquely soft, moist texture and mild, delicate taste Galbani Mozzarella Fresca is known for, and the melt-in-your-mouth deliciousness few can resist.
Recently listed by the editors of Saveur Magazine as one of their favorite fresh mozzarellas, we hope it becomes your favorite as well.

Juicy tomatoes, creamy mozzarella and fragrant basil--is there any combination more reminiscent of summertime? I don't think so! When my friends at Galbani® invited me to take part in the 2013 Galbani Caprese Challenge I was immediately on board. We wait a long time for tomato season to finally arrive so when it does, I like to keep the flavors simple so that the ripe tomato flavor can really shine....more

The fact that I have a slight obsession with mozzarella didn't hurt either. ...more
My family's favorite quick and easy summer salad is a fresh Caprese salad.Made with perfectly ripened tomatoes from our garden or a local farmers' market, pungent basil snipped from our herb garden, soft fresh mozzarella, and a drizzle of olive oil and irresistible balsamic vinegar...and, wow, we're quite the smitten bunch. And I just love that it's a dish that our young girls ask to help out with in the kitchen....more
The classic Caprese salad has been pretty much my favorite food since I first had it a hundred years ago as a naive pre-freshman, touring my future college campus. I sat at a sidewalk cafe on Commonwealth Avenue and pondered the pretty plate of mozzarella, tomato, and basil, struck by the classic composition of its three-part structure....more
A giant cardboard box, labeled "Keep Refrigerated" arrived on my front porch last week. You already know that one of my favorite flavor combinations is that of fresh tomatoes (preferably home grown), fresh mozzarella and basil, sprinkled with kosher salt and drizzled with liquid gold (normal people call it extra virgin olive oil) These ingredients make up the iconic Caprese salad. Unless you’ve been living under a rock, you know what this is. There is a reason it has been around forever. It’s good. No, it’s better than good. It’s darn near perfection on a plate. When that plate is in front of me, it’s simply irresistible. Who can blame me. Look at it. ...more

But I can say that this macaroni and cheese is in the top five that I’ve ever made in my existence on this planet....more
