Gingerbread Pumpkin Pie, Take Two (or four!)

One of the things I like best about (most) Friday nights is the fact that I don't have to set an alarm. I can go to bed whenever I choose, wake up naturally on Saturday morning, and even (gasp!) go back to sleep if I so desire.
This morning, though, I happened to wake up early (well, early for me, anyway!). Figuring that I could always take a nap later, I decided to get out of bed and start my day, because... PUMPKIN PIE! (Tip: Pumpkin pie is always a good motivator. At least as far as I'm concerned.) So I made myself presentable, grabbed a quick breakfast, then headed to the grocery store to pick up the ingredients to make my much-anticipated and dearly beloved Gingerbread Pumpkin Pie.
Oddly enough, I discovered that I would have to make a couple of adjustments to my own recipe, as apparently packaging sizes have changed since I first came up with it! My original recipe called for two cans (385 mL each) of evaporated milk; however, all the cans I found were actually 370 mL. Colour me reckless, but rather than buy a third can and only use a tiny bit of it, I just went ahead and bought two 370 mL cans, crossed my fingers, and hoped for the best.
That's me, always living on the edge!
Also... have pie shells shrunk?! Seriously?! My original recipe filled three 9" deep-dish pie shells, but this time I actually had enough to fill four. Fortunately the shells I bought (no, I didn't make my own) are sold two to a package, so I had four of them on hand - otherwise we would have been eating a pie-sized batch of pumpkin pudding! (Not necessarily a bad thing, I suppose.)
Other than that, though, everything else in the recipe stayed the same. I've updated it according to the above changes, and am sharing it here for your convenience (I've replaced it in my earlier post as well).
Aaaaaand... it was yummy! I mean, it still IS yummy. (Even I couldn't polish off FOUR pumpkin pies that quickly!) Despite my risky move in slightly decreasing the quantity of evaporated milk, it all worked out just fine.
(I promise, they taste better than they look!)
One of the pies will be going to a friend tomorrow, and two will probably accompany us to a Thanksgiving dinner hosted by friends on Monday, so the wealth will be shared (and my waistline - such as it is - will be saved).
