Bunny Tails


Oh remember the days when you could go to the store and see displays of "Hostess" Bunny Tails at the check out just begging to be bought?  I do, I could never resist buying myself a yummy package.

I would hide from the kids and enjoy my treat.  I loved pealing off the marshmallow layer and eating the chocolate filled cake.  Then I would savor the mushy goodness of the marshmallow coconut shell.

So craving my guilty pleasure and with no one to turn I decided to make it myself......and make it gluten free so I can eat it and not have a belly ache.......double win!

I simply combined 3 of my favorite recipes:

Gluten Free Chocolate Cake

Fluffy Filling

Marshmallow Icing

To assemble:

Bake the chocolate cupcake, after they have cooled fill with fluffy filling.  Top with marshmallow icing.

For topping, in a food processor add 1 cup Shredded Coconut and a few drops of pink food coloring.  Process till coconut is in fine small pieces and color is throughout. Dip the iced cupcakes in coconut topping and Vola.....Bunny Tails

These, I have to say are even better then the original!  They are Amazing!! You will be happy you gave these a try!
