Gluten Free Chickpeas & Tuna Salad
My boyfriend and I received news from some recent test results of his that's both good and bad. The good news is of course that we now know what is causing him problems! The bad news is that he’s been totally eating ALL of the wrong and harmful stuff. He now needs a diet that consists of gluten-free, dairy-free, egg-free, AND sugar-free. Oh yeah, by sugar-free, I mean ALL sugar. Even honey or maple syrup is bad. It’s sad but we are trying hard to get through this and feed him correctly!
My newest invention for him is a chickpea and tuna salad. He loves hummus so we knew he’d end up loving this too! He’s eaten this a few times already and enjoys it.
Chickpeas And Tuna Salad
- 1 Can of Tuna (I used Starkist Tuna in Water)
- 1 Can of Chickpeas (Garbanzo Beans)
- 1/4 C Red Onion
- 1 Garlic Clove (Minced)
- *Optional* Handful of baby spinach
- 1 TBSP Olive Oil
- 1/4 TSP Cayenne Pepper
- Salt & Pepper to taste
Mince garlic and dice red onion. In a medium bowl, add the drained can of tuna and olive oil and mix thoroughly. Add in the chickpeas, garlic, and onion next and mix well. Add cayenne, salt & pepper and mix once more. If using spinach, spread evenly around the plate. Empty contents of mixing bowl into the center & enjoy!
