Given the incredible crust-flake-producing properties of vegetable shortening and the amazing pie-structuring properties of silken tofu, veggie or vegan pie is no more challenging to make than traditional pie. But gluten-free pie is another story.

It's a topic of much thought for many gluten-free bloggers, especially around the holidays, when many of us crave traditional recipes. For more ideas, check out Thanksgiving favorites at Gluten-Free Easily, and share your trusted recipes with Pie Daddy, a brand-new blog by a fellow who is new to GF cooking and loves pie.
One really excellent thing about GF pie crust: Since there are no glutens to form, you don't have to worry about overworking or resting the crust. Being a gluten alarmist is by far my least favorite part of pie baking, so as soon as I can get down to the natural foods store for some basics (xanthan gum, nonwheat flours), I'm going to start fooling around with these crusts and see what I like -- though I do not follow a gluten-free diet, I like having options and being able to share with my GF friends and coworkers.

- Shauna at Gluten Free Girl made a step-by-step tutorial with great tips for pastry blending.
- Stephanie at Wasabimon adds a list of things she's thankful for to her recipe for crust and filling for butternut squash pie.
- Carrie at Ginger Lemon Girl uses cream cheese in her recipe for a supple, easy-to-work crust.
- I Am Gluten Free has a pear galette that's a twist on a standard crust, using GF flour and Earth Balance spread.
- Linda at Gluten Free Homemaker developed recipes for pie crust and multi-purpose pastry dough
- Elana's Pantry has a crust recipe with just six ingredients: almond flour, sea salt, baking soda, grapeseed oil, agave nectar, and vanilla.
Other Gluten-Free Crust Ideas
- I haven't even begun to explore the idea of "impossible pie," the recipe series pioneered by Bisquick, in which you mix all the ingredients, pour it into a pie pan and the "crust" settles to the bottom. If you can cook it, a GF blogger will have come up with an impossibly clever version of it, and Gluten-Free Cooking School's got an "impossibly easy" pie mix that's 100% gluten free.
- Who needs crust, anyway? Try crustless GF pumpkin pie or crustless coconut pie from Gluten-Free Easily.
- Mom Cooks Gluten Free has tips for working with the store-bought Gluten Free Pantry Perfect Pie Crust mix.
- I found this lemon pie with oatmeal cookie crust on Fat Free Vegan.
- You could make an awesome sweet crust for key lime pie with this graham cracker recipe from Cake and Commerce.
