Grilled Banana Muffins

Oh yes I did.
This morning I had big plans – plans for these overly ripened bananas to meet their destiny.
Muffins. Banana muffins. Chocolate Banana Muffins. Chocolate Banana Blueberry muffins.
You’ll have to excuse all these flavors in the muffins – I get a little overzealous in the mornings.
However, when I woke up this morning, it was hot. I know this is the story of my life for the next three months, and I’m okay with it. What I’m not okay with is using the oven when it’s hot outside – which can be a problem when you are a food blogger in need of new recipes. All I wanted to do was bake today. What I didn’t want to hear was my niece and nephew complain the second they walked through the door that it was hot in my house.
Well, there’s only one way to find out!
Turns out, you can grill muffins.
I went inside by the AC and watched from the window instead.
- 1 and 1/2 cups gluten free flour mix
- 1/2 cup chocolate sunwarrior protein powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 tbsp. cinnamon
- 3 very ripened bananas
- 1 flax egg (1 tbsp. flax + 3 tbsp. warm water)
- 1 tbsp. vanilla extract
- 1/4 cup agave nectar
- 2 tbsp. maple syrup
- 2/3 cup unsweetened applesauce
- 1/2 cup blueberries
Directions: Begin by combining your flour, chocolate protein powder**, baking soda, salt, and cinnamon in a large mixing bowl. In a separate mixing bowl, mash your three bananas with a fork. Add your agave, maple syrup, vanilla, and applesauce. Stir until smooth. Pour your wet ingredients into your dry ingredients and whisk until smooth.
Next, spray a muffin tin with cooking spray. You will want to have preheated your grill for about five minutes – set the burners to low. Place the muffin tin pan on a cookie sheet (to avoid burning) and place them on the lowest burner. Cook for 15-18 minutes. The muffins are done when a toothpick (or a fork) comes out clean.
**Note: If you do not have protein powder, use 1/2 cup flour and 1-2 tbsp. cocoa powder.
I think I’ve found my calling – grilling everything. There hasn’t been a day in a very long time where the grill has not been turned on.
I think I created a monster.
