Grilled Cheese with Prosciutto, Onions, Manchego, Apple, & Pepper Jelly

So.... during my grocery shopping adventure (I'd rather grocery shop than go to the mall... Sad. I know), I found some fresh sourdough that looked and smelled totally deilsh. Good bread deserves to have amazing ingredients in between its tasty slices.
Knowing I had some prosciutto, in my fridge, I picked up some manchego cheese that I thought would pair well with it. Gotta love that salty tang. Upon arriving home I dug out some onions and then some pepper jelly from the back of the fridge (I make my own pepper jelly but most major grocery stores carry it). I also spotted my tub of bacon grease sitting in my fridge (yes, I save ALL of my bacon drippings, its my favorite thing to cook in besides butter... Hence my user name) and decided my onions would work nicely sauteed in that until nice and caramelized. At that point I thought my sandwich was going to be the ultimate grilled cheese. But, thats when I spotted it. A crispy, refreshing, tart pippin apple sitting on the counter. My sandwich would now be complete. So now I give to you my ultimate grilled cheese sandwich. It's amazing.
Grilled Cheese with Crispy Prosciutto, Manchego, Caramelized Onions, Apple, and Pepper Jelly
2 thick slices of sourdough bread (or any bread of preference)
4-6 very thin slices of prosciutto
3-4 slices of manchego cheese
1 small yellow or white onion, thinly sliced
1 ½ Tbs bacon grease (can substitute with butter, but will lose the smoky flavor)
1 apple, sliced (pippin or granny smith recommended)
1-2 Tbs pepper jelly
Grease an eight inch fry pan with cooking spray and turn the stove to medium heat. Fry up the prosciutto until nice and crispy. Setting the prosciutto aside. Lower the stove temperature to meduim low. Add the bacon grease into the same pan, letting it heat through. Add onions and saute until tender and golden, about 15 minutes. Drain on paper towels. Taking your slices of bread, spread a thin layer of butter evenly on each side. On the inside of one piece, spread the pepper jelly. On top of the pepper jelly, add the manchego. Layer the caramelized onion, 3-4 apple slices, and prosciutto as desired. Top of with remaining slice of bread, making sure the buttered side remains on the outside. In a clean non-stick pan, grill cheese side down first on medium low. When the grilled side is a dark golden and crispy, flip. Using a plate, press the sandwich down into the pan, shrinking its height and compacting all its gooey yummy ingredients together. When crispy and golden on the bottom, remove from heat and slice in half. Serve hot. Enjoy!
