Tonight-meh- no ideas for dinner. The asparagus had gone bad. The squash would get poor reviews. We had some pasta-a half box of lasagna noodles (seriously-why don't the number of lasagna noodles ever equal out to my lasagna needs?) and some elbows. Time was short.
I didn't want mac and cheese. I didn't want to chance my ragu and cheese "specialty" with the WRONG noodles. (Seriously--using the wrong shape disturbs some people in the family) But pasta seemed to be in the works.
So...I made the box of elbows and invited everyone to make their own pasta creation with the provided shredded cheese, parmesan, Ragu, or "ramen style" with soy sauce/sesame oil/etc. Or whatever they could dream up.
I zapped a frozen vegetable to go with...and hoped for the best. I got a more than the best reaction from the children. The 16 yo who looked disinterested and like he would again say he had no appetite started nabbing cheese as I grated it and talking out ideas. The 14 yo raved about how smart I was and what a great idea. The 11 yo thought and thought and ended up with plain cheese on noodles but zapped to melt.
Yay-genius from desperation dinner. Lots of love from the kids who want to do this again.
Do you have a standby desperation dinner or a moment where dinner just came together out of the cupboards and it WORKED?
