Last year at this time we had snow in the Southern states and I prepared a pot of my homemade broccoli soup. No snow today but it has been raining all day, it is chilly and damp outside, a perfect time to whip up a batch of home made soup!
During this time of year I receive many requests for soup recipes and on my blog one of my most popular recipes is for my home made broccoli soup. This soup is broth based, no fat, heavy cream or cheese, just a few shreds of cheese as a topping when you serve the soup, but that is optional, so if you are looking for a healthy, palate pleasing soup try this one and let me know what you think.
Healthy and Tasty Broccoli Soup
Ingredients:
- 1 lb/16 ounces of fresh broccoli or frozen chopped into bite size pieces
- ¼ of a large sweet yellow onion, chopped about 1/2 cup
- 2 fresh garlic gloves, crushed or chopped
- Variation: 2 tsp. crushed garlic from a jar or 1 tablespoon of garlic powder
- 4 cups of vegetable broth, low sodium
– Variation: The vegetable broth adds to the flavor however chicken or beef broth works just as well
– Shopping suggestion: Purchase extra broth and frozen broccoli when on sale
- 1 teaspoon vegetable, coconut or olive oil
- ¼ cup toasted walnuts- optional, adds another layer of flavor to the soup
- Toppings, Optional:
- ¼ cup shredded cheddar cheese
- ¼ cup diced tomato
Warm the Olive oil over medium heat in a large pot and sauté the diced onions and garlic for 5 to 6 minutes, until the onions are soft and garlic starts to brown
– Cover the pot and the onions and garlic will steam
- Add the fresh broccoli and broth to the pot, stir
- Place the lid on the pot and cook the broccoli over medium heat for 8 to 10 minutes, until the broccoli is tender
– Allow the mixture to cool, before you blend, otherwise you will have an explosion of broccoli soup all over your kitchen!
- Pour ½ the soup in the blender, add the walnuts and puree (the walnuts add a little added flavor. I like pieces of broccoli in my soup, if you prefer a smooth soup blend the entire contents from the pot. You will probably have to blend in two batches
– Or use an hand immersion blender
- Blend until thick and smooth
- Once blended pour back into the pot and simmer until warm, 4 or 5 minutes
- Spoon into the bowls and top with teaspoon of tomatoes and a sprinkle of cheddar cheese.
An easy and delicious soup any time of the year. Serve with your favorite sandwich or salad!
