Healthy Asparagus Quiche

I love any opportunity for me to lighten up cream based recipes using fat free or low fat plain Greek yogurt. I'm obsessed with Greek yogurt sauces. So much so that I have this bad habit of eating spoonful after spoonful while I'm cooking any given dish. Then I only have a little left over to use toward the actual recipe I'm making. Serious problem. I must learn better self control. It's kind of like my current Snickers and Reese's addiction. They just stare at me every day asking me to eat them. Damn you Easter candy! I don't need you. Yes I do...

Anyways, let's get straight to the point. My Healthy Asparagus Quiche was a major hit at a brunch Andy and I recently hosted at our place. You might notice the plastic tablecloth in the picture above. Classy added touch. Just how we like it. This recipe is pretty low in fat considering how it could be, but you would really never know had I not told you.

Box of Chebe Pizza Crust Mix (duh, love this stuff!) or any of your favorite pizza dough
+ Extra Chebe mix or gluten-free flour to keep dough from sticking as you manipulate it
1 Bunch of asparagus
1-1.5 Cups plain fat free Greek yogurt (I like Chobani or Fage)
3-4 Sprigs fresh thyme leaves
3 Cloves pressed/minced garlic
1/2 Red onion, thinly sliced into strips
1 Tbsp brown sugar
2 Tbsp olive oil
Salt & pepper to taste
3/4-1 Cup 2% shredded cheddar cheese
3-4 Eggs (I used 3)
Handful shredded parmesan cheese
Cooking spray


  • Combine yogurt, garlic, thyme leaves and cheddar cheese in a bowl. Season with salt & pepper to taste. Set aside
  • Slice onion and toss into saute pan with about 1 tbsp olive oil and 1 tbsp brown sugar - cook until soft and caramelized
  • Remove discolored ends of asparagus and discard
  • Saute asparagus in about 1 tbsp olive oil until soft and cooked through - season with a little salt and pepper
  • Spray pie/quiche dish with cooking spray and then sprinkle and coat dish with gluten-free flour to keep the dough from sticking (GF dough can be super sticky and hard to manipulate)
  • Spread pizza dough out into dish using your fingers making a crust - bring dough up the sides
  • Whisk eggs and caramelized onions into yogurt mixture
  • Pour egg/yogurt mixture into dish
  • Place cooked asparagus on top and then sprinkle with parmesan cheese
  • Bake with filling at 450ºF (if you're using Chebe, but follow the instructions for your specific dough) for about 30 minutes
