Healthy Chocolate Scones!

Teenagers!

They sure seem to have been handed an unfair rep, I have heard some people categorize them as “rude”, “self absorbed”, “stubborn”, “bratty”, “promiscuous”, “violent”, “lazy”, and “disrespectful” at the very least!

In some conversations, when talk gets around to my daughter and someone asks me her age and I tell them, I get a concerned, almost apologetic look and I am given a response that goes along the lines of “Don’t you just wish they would skip this age and become 21 already”; or “there’s a reason we are subjected to them in their teen years – so we are ready for them to leave for college”.

But, 8 out of 10 of the teenagers I cross paths with don’t seem deserving of any of these titles; to me they are “polite”, “selfless”, “compromising”, “ethical”, “kind”, “helpful”, “hard working”, “respectful”, and “motivated”.

In fact, I relish, and have relished, every day of my daughters teen years – I am so NOT looking forward to her leaving home for college some day.

So when I came across this video of a 15 year old who acted with more dignity, selflessness and compassion than his parent – I felt I had to do what I always do and share it on here with yall.

 

Teenagers might have a bad rep, but there are plenty of good ones who have, and will, continue to negate that rep! Which brings me to scones. When you hear “scones” – what comes to mind?
Butter?
Sugar?
White flour (that seems to turn into cement in your belly)?
Well…these scones do not have butter, or a ton of sugar, or white flour! These scones negate the high fat and sugar content ones! These scones are good ones! Rather, good for you ones!

These scones are made with ground up oats, coconut oil and dark chocolate instead. They are low in sugar and high in “keeping-you-satisfied-all-day-with-nutritional-goodness” content!

Ingredients
  1. 1 3/4 cup ground oats (I used my blender)
  2. 1 1/2 tablespoons baking powder
  3. 1/2 teaspoon salt
  4. 1/3 cup cocoa
  5. 1 teaspoon instant coffee granules
  6. 1/2 teaspoon cinnamon
  7. 1/2 cup brown sugar
  8. 2 eggs
  9. 1/2 cup melted coconut oil
  10. handful of dark chocolate chips
Instructions
  1. Preheat oven to 400 degrees
  2. Mix all the dry ingredients (first 7 ingredients)
  3. Then mix in the remaining 2 wet ingredients (if the dough is too dry, add a teaspoon or 2 of coconut oil till dough sticks together) and then add the chocolate chips
  4. Roll into balls and flatten into circles and
  5. Bake for 12 minutes- let cool slightly before devouring :)
