Spring has sprung (actually if you ask me it did a month ago!) and I hear the birds singing. I just love it this time of the year because it means longer days, more sunshine and no more SAD (Seasonal Affective Disorder) for me. I didn’t know SAD existed before I moved to the UK. Fortunately, mine is not a full-blown SAD, but a sub-syndromal one.

I generally feel healthier by spring and at my peak in the summer. I can work for long hours and that makes me really happy and energised. Work is good for the soul. And so I make sure my mind, body and spirit are ready for the demands I’d be making on them.

This week I started doing yoga . It’s recommended that one does this 4 times a week. I have enjoyed it thoroughly so I intend to keep at it. On top of this, I also went back to my weights and crunches. Can I just say that I am delightfully in pain right now? It’s the best feeling in the world!

And like any goddess, I treat my body like a temple. This is why back in July 1998 I decided to stop eating pork and beef, and by January 1999 I stopped eating chicken as well.

I’m not going to lie, I do miss Kentucky Fried Chicken’s Zinger once in a while, but that’s ok. I never act on it because it will make me physically sick. I do have Cauldron for my vegetarian sausages; Quorn for vegetarian chicken, ground beef, roasted chicken slices, wafer-thin ham and other vegetarian dishes; and loads of vegetarian recipes. Besides, I’m not a complete vegetarian like my husband. He loves spicy noodles now and then, but we have to be careful when buying them. We need to check the ingredients to make sure the pot noodle does not contain beef/chicken extracts or stock.

Whenever we go to Manila my mom tries to prepare something that’s completely vegetarian for Thom. I have to remind her that she can’t use oyster sauce or fish sauce with the chopsuey or any other dish she whips up for him. Vegetarianism is still a bit alien to a lot of people in the Philippines. They don’t think of fish or prawns as meat. I remember when we went to the Muslim region of the Philippines . The people were the friendliest and the kindest we’ve met, but it was tough explaining to them that Thom could not eat this and that. So they would ask, “What about chicken?” And we’d say, “No, that’s still meat.” And then they’d say, “Fish or prawns?” Hmmm, still no. For the life of them they couldn’t figure out how he managed to eat when he didn’t eat meat.

I’m a pesco-vegetarian – that means I only eat seafood and vegetarian food. Five years ago I tried giving up seafood as well, but failed. I developed secondary hypoglycaemia, which resulted in my skipping other food I would normally eat with seafood. It’s great that I love Italian. It’s is best for vegetarians! I have a scrumptious Penne with Vodka and Tomato Cream Sauce recipe on the Recipes page. And if you want a really easy chocolate dessert, try this French Flourless Chocolate Cake recipe.

Thank God I’m not vegan , though I doubt I’ll ever be able to give up cheese and eggs anyway. However, I do use soy milk and only eat dark chocolate because I’m not allowed to have dairy. But for some reason, I can digest dairy cheese!

Let me know what you think of the recipes and if you have any question about anything mentioned in this blog, just use the Comment link below.

Happy Easter and here’s to a healthier goddess you!

Thanks for sharing! I love food from the Philippines and seems you love the same foods I do.

Come fall and winter, if you do struggle with SAD, check out the book "The Good Mood Diet" (UK version of The Serotonin Power Diet) - you may have heard about it already, but I've seen it work wonders. It'll be so easy to follow for you being pesco-vegetarian. Protein is an important nutrient, but I think in the US it's overated - we don't need that much and vegetarian foods have protein in them, too, more than people think. The principles of The Good Mood Diet (Serotonin Power Diet) are that carbs allow the brain to boost serotonin and serotonin can give you mental energy, boost your mood, and cut down on cravings that sometimes we just have from feeling a bit low or tired. My colleague Judith Wurtman, PhD, was one of the people to discover this at MIT and many people have had success with it.
