Help Me Write This Post: Cambodia and Vietnam

Until you have been a student of Asian art history grown into an adult with a fetish for Vietnamese coffee and pho, you can not know what it means to be able to say this: I have just booked my trip to Vietnam and Cambodia. I'm dizzy with anticipation.
We don't fly out until January, but in the meantime, I'm loading my Netflix cue and stacking up library books with media from those countries. I'm already a fan of the food and the art, but to stand on the streets of Saigon, well, to call it a dream come true would not be an exaggeration.
And to see the temples of Angkor Wat, excuse me, I might have to go sit somewhere and cry for a little bit. I'm rather an emotional traveler. I got a little teary on the vaporetto in to Venice, at the lapis and gold leaf pool at Hearst Castle, and at the Lake Agnes glacier tea house in Banff National Park. There's nothing like a breathtakingly pretty place to set me off. But I digress.
What I want to know from you is this: Have you been? Did you blog about it? Will you share? And I'd also like your advice. I have an itinerary, so I'm not so keen on "You have got to see [place name]!" but I would like to know the funny little things like what you wish you'd brought from home because you really needed it and you could not get it (health and/or comfort items) and the cultural oddities that you are so glad you tried even though you didn't want to at first and, oh, you know what I'm talking about, right? Also appreciated, remarks around "You must read/see [fill in the blank] before you go."
