Hey, Elvis! Cupcakes {gluten free}

So, you know what that means, right? Elvis. Bananas. Peanut butter. Honey.

It’s a Southern thing, that’s for certain sure, so if you don’t get it, don’t feel bad. Heck, I’m Southern as Miss Scarlet and I don’t get it.

And before you leave comments telling me that to be a “real” Elvis anything, bacon is a must… well, don’t. Truth is, and I have this on good authority from my well-informed friends in Tupelo (yes, that’s where the King was born and raised) that Elvis often enjoyed his now-famous sandwich of mashed bananas (or ‘nanas, as he called them), peanut butter and honey without a smidgen of bacon in sight, even if he did eat his fair share of fried pork at other times. Bless his heart.

Besides, I’m not a fan of adding bacon to desserts. If you follow on Facebook, you know we discussed this (and a few other foodie pet peeves) recently. Of course, you can add bacon if you like. I promise not to mind. After all, I want you to be happy. That’s why I made these amazing cupcakes for you.

Mr. Dreamy loved them. He channeled the King and started singing “Can’t Help Falling in Love”. Although I’m pretty sure he was talking about these cupcakes. Heaven help us!

Hey, Elvis! Cupcakes {gluten free}

You could also make these and enjoy them unadorned, if you prefer. (Just FYI, the King would call that “letting them go nekkid.)

This recipe is free from: gluten, dairy/casein (option), soy, peanuts (option), tree nuts. This recipe is NOT low fat, calorie, carb or anything else.
 
Ingredients
 
Banana Cupcakes:
  • 1 cup Gigi’s Everyday GF Flour Blend (Gum-Free)
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 very ripe bananas, peeled and mashed
  • ½ cup granulated white sugar
  • 2 eggs, room temperature
  • ¼ cup oil (your choice)
  • 1 teaspoon pure vanilla extract
Peanut Butter Honey Frosting:
  • ¾ cup peanut butter (Use any nut butter you love, or sunflower seed butter, if you are nut-free)
  • ½ cup marshmallow creme
  • 4 Tablespoons honey
  • 4 Tablespoons dairy-free butter substitute, softenend (or real butter, if you consume dairy products)
  • Additional honey, for drizzling, optional, but Elvis would want you to add them
  • Chocolate chips, for garnish, optional, but again, he is the King and all (Be sure to read labels on chocolate chips and select a brand that is gluten-free and free from any other allergens you avoid.)
 
Instructions
  1. Preheat your oven to 350F and line a 12-section cupcake pan with pretty cupcake papers. Set the pan aside and mix your cupcake batter…
  2. In a small mixing bowl, whisk together flour, cinnamon, baking powder, baking soda and salt. Set aside.
  3. In a separate, larger mixing bowl, mash bananas and add sugar, eggs, oil and vanilla. Whisk to blend until mixture is uniform.
  4. Add dry ingredients; stir until smooth.
  5. Divide batter evenly between cupcake pan sections.
  6. Bake about 15 minutes, or until tops appear dry and spring back when lightly pressed. (Be careful! Don’t burn yourself.)
  7. When they are done, remove the cupcakes from the pan and set aside to cool while you mix up the frosting…
  8. In a mixing bowl, combine peanut butter (or alternative), marshmallow creme, honey and butter. Use a sturdy spoon and beat until smooth, creamy and uniform.
  9. When cupcakes are cooled, spread or pipe frosting onto each one, then drizzle with honey and sprinkle with chocolate chips, if you like.
  10. Pour a tall glass of cold (dairy-free) milk and indulge like a King!
