Cheesecake is missed by vegans the world over. I believe that my favorite non-vegan non-raw cheesecake would be that of my college friend's Jasprin and my sister's bestfriend Zavier. Jasprin make her cheesecake with sour cream, and Zavier make a mean sweet potato cheesecake. So hands down, homemade cheesecake it the best. Now, I have my own recipe, and I believe the Cheesecake Goddess looked down vegan soul and blessed me with cashews instead of soy! Praise the Cheesecake Goddess. So what do you to get a vegan for Valentines Day? Make something from the heart! I will show you how to make vegan cheesecake with strawberries and cashews.


For Macadamia nut Crust:
2 cups macadamia, soaked in water 1 hour
1/2 cup dates
1/4 cup coconut flakes

For Cashew Cream Cheese Filling:
2 1/2 cups cashews, soaked in water 1 hour
1/2 cup dates
1/3 cup lemon juice
1/3 cup agave nectar
1/2 tsp salt
1/4 teaspoon nutmeg
6 tablespoons coconut oil
2 teaspoons vanilla extract


Macadamia Nut Crust: 
Use a food processor to pulse together macadamia nuts and dates. It should create a coarse, sticky crust mixture. Add coconut flakes to a pie pan in an even layer. Add cheesecake pie crust mixture over it. Press done and around the pie pan to form a dense crust.

Cashew Cream Cheese Filling:
Add all the ingredients to the food processer; cashews, dates, lemon juice, agave nectar, salt, nutmeg, coconut oil, and vanilla extract. Process until smooth. Try not to eat it all at this point.

Gently pour the cashew cream cheese filling into the macadamia crust. Spread with a spatula so that it is even. Freeze vegan cheesecake for 1 hour. If you are not prepared to serve after 1 hour, transfer the cheesecake to the refrigerator. It is now okay to cut, and serve alone, with strawberries, or your accompaniment of choice.
