Hot Fudge Caramel Pecan Brownie for 1 in under 5 Minutes!

    So I'd like to lose about 10 lbs but I still want a brownie now and then. I figure the smart thing to do is make 1 brownie, not 1 one pan of brownies. If I make a pan of brownies, I'll have one now, one later and 3 tomorrow. Now, we've all tried the various 1 serving mug brownies that are rubbery and tasteless. This is not one of those brownies. This was Heaven in a jar. It took less than 5 minutes and I could not eat the whole thing. That's not counting the 3 bites my daughter took. I made it in a small mason jar.  It looks like a very small serving but it packs a big punch! See how yummy this looks?


   You can use any glass container suitable for the microwave. Make sure to coat it with nonstick spray first. I added a layer of caramel sauce and pecans to the bottom of the jar and set it aside. In a separate bowl, I mixed 3 TBS of semi-sweet chocolate chips with 1 TBS of butter and melted in the microwave until smooth. I  then added 2 TBS of water,  4 TBS of sugar, a pinch of salt, a dash of vanilla , a few more pecans and mixed well. The last thing I did was add  4 TBS of all purpose flour and combine until just barely mixed.  Do not over mix the flour.  That's it ! I didn't forget the egg... there are no eggs in this. 


   Once I had it mixed together, I poured it into the mason jar and put it in the microwave for 70 seconds. I added 10 second increments for a total of 110 seconds. Microwaves very so your time may be different. It's better to be underdone than overdone. You can't fix overdone so go in 10 second increments. Every time I checked it, it looked like boiling liquid until the last 10 seconds. At that point, it was only boiling at the top so I stopped at that point. The top will not look done but it continues to cook and will turn out perfect.


   While still boiling hot, I added a few white chocolate chips on top, a few more pecans , hot fudge sauce and caramel sauce. I'm telling you, it was delish!  Perfect for a late night snack.

Caramel Sauce

Pecans or your favorite nut

3 TBS Semi-Sweet Chocolate Chips

1 TBS Butter

2 TBS Water

4 TBS Sugar

Pinch of Salt

Dash of Vanilla 

4 TBS All-Purpose Flour


Topping: ( Optional or substitute regular chocolate chips, butterscotch chips,  walnuts etc for your favorite toppings)
