How do I turn Groceries into Dinner?

   As a busy working mom of 3 small children with a husband who's busier than a bee and a self-diagnosed shopaholic . . . grocery shopping can often be an overwhelming task.  Add in the fact that as a Registered Dietitian and Licensed Nutritionist who's supposed to be categorized as a "nutrition expert", the burdens of life can sometimes feel like a mountain crushing down on me.  Today, is no different than the rest, other than because of the Labor Day weekend holiday; all 3 children are in school and work outside of the home holds briskly at bay.

"Trust in the Lord with all your heart and lean not on your own understanding; in all your ways acknowledge him, and he will make your paths straight." ( Proverbs 3:5-6)  After enjoying a much needed cup of Starbucks half cafe and finishing my morning Bible study (Stepping Up by Beth Moore) I looked up and saw Aldi grocer across the street.  Hmmm, dare I tackle the grocery store without a list today??  I hadn't even put my menu planning skills to the test but sensed that I should go ahead with the journey.  Our refrigerator has been getting pretty bare and the work week beckons and I'm determined not to be left holding the phone calling for take-out to fill the gaps of my lack of own personal planning for my family.  Amazingly, the bountiful fresh produce at a great price made my heart smile in expectant anticipation of the good food I could feed my family this week!

"I lift up my eyes to the hills-where does my help come from?  My help comes from the Lord, the Maker of heaven and earth." (Psalm 121:1-2)  With all the knowledge, recipes and ideas floating around, sometimes I forget that God wants to help me in even the smallest details of life.  But does this include grocery shopping and meal planning?  Of course it does, my sweet daughter!  I'm so thankful that I don't have to figure it all out ahead of time .  . . I'm so grateful that I can call out to a Heavenly Father who feeds His children with not only food, but the best, most nutritient dense goodness that we could ever imagine!

Aside from worldly wisdom, God's direction can miraculously turn groceries into healthy meals to feed the family.  Matthew 4:4 Jesus answered, "It is written:  'Man does not live on bread alone, but on every word that comes from the mouth of God'".  His direction fills in the gaps so that we get to enjoy a take out meal every so often, but don't have to rely upon it to feed the family every night just because we're feeling too busy or overwhelmed.

So, the lovely zucchini, portabello mushrooms, ricotta cheese, marinara sauce and shredded cheese that was on sale miraculously turns into Vegetarian Zucchini Lasagna tonight and hubby gets a special hot meal for lunch tomorrow when I lovingly prepare his next lunch. What is still left is then transformed into a hearty Minestrone Soup when beans and diced tomatoes are added to a simmering pot  . . .    Are you too finding yourself overwhelmed with family meals, grocery shopping and meal planning?  Know that you, my friend, are in good company.  We can walk hand in hand and stand humbly in our efforts to make the best out of the fine ingredients we're given in this journey called life!  Be well and stay inspirReD, friends!
