Moving from summer into fall is a gradual process for us Floridians, but eventually the long, hot, and lazy days of summer give way to the cooler, short days of autumn. Life just seems to move faster when the temperatures drop and nights begin earlier. Kids are back to a busy school routine, work seems to pick up, and just when there's more to do there's less time to do it. Before we know it, the holiday season is upon us. Seems like Halloween is barely on the radar, and then suddenly it's time to prepare for Thanksgiving, and that means Christmas is around the corner. Who has time to do it all? I don't!
Even with the busyness looming, we look forward to that first day when the air seems lighter and cooler; it is a sign that fall has truly arrived. That first morning when you walk out to get the newspaper and realize there's a hint of crispness to the air is always cause for celebration. It's finally time for fall and all of the wonderful traditions we've created throughout the years! While this can be daunting, it also means family togetherness, festive decorations, and of course delicious, warm comfort foods. Soups are usually one of the first things we enjoy to welcome the fall.
For many years, fall meant a big, steaming pot of chili for dinner, the kind that had been simmering all afternoon while I put the finishing touches on hand-crafted Halloween costumes, set out elaborately carved pumpkins, or made sure that my Thanksgiving decor was done just so. As the kids have grown older and we're all busier, we've streamlined our fall traditions with store-bought costumes, simple decorations and faster, easier meals. A quick soup is just as hearty and filling as the simmer-all-day chili and leaves more time to relax, spend time together and enjoy the season with my family.
Still, I don't like to compromise too much when it comes to cooking and eating. Because fresh, high-quality, natural ingredients are a must, I've learned to create simple recipes, often with whatever I happen to have on hand, instead of the pre-packaged convenience foods I grew up with. They don't take all that much longer and they're so much better!
When starting soups, a buttery roux base is an easy way to make a creamy, rich soup. Adding a few simple ingredients to simmer is easy, and by the time the table's set, dinner is ready. Just as I take pride in creating great meals for my family, the folks at LAND O' LAKES take pride in producing the same great butter for you as they do for their own families.

Creamy Chicken Potato Soup
- Chicken Tenderloins, 2 pound bag (Chicken not thawed? No worries, just increase the cooking time a little. It really won't make a difference.)
- LAND O LAKES® Butter, 1/2 cup
- Flour, 1/2 cup
- Poultry Seasoning, 2 teaspoons (or a combination of your favorite herbs such as sage, marjoram or thyme)
- Potatoes, 3 or 4 medium
- Black Pepper, 1 teaspoon
- Yellow or White Onion, 1 medium, sliced
- White Wine, 1 cup
- Chicken Stock or Bouillon, 6 to 8 cups
- Cream, 1/2 cup

Slice the onion and dice the potatoes.

In a large stockpot, melt the butter over medium heat.

Add onion and cook for a few minutes, until the onion softens and begins to brown a bit.

Stir in the flour and poultry seasoning then cook for a minute or two, until the roux just begins to brown.

Pour in the wine and stir continuously until the mixture is nice and smooth.

Add the chicken, potatoes and the bouillon and bring it to a nice simmer. Reduce the heat, and cook uncovered for another 20 minutes or so, until the chicken is done.

Remove the pot from the heat, stir in the cream, season with black pepper, and serve it up nice and hot. Enjoy!

A lot of our family traditions/recipes were lost, so it has been all about starting our own things.
i do not use many convenience foods. I like to cook and can adapt most any recipe to suit my families needs... more of this, less of that, or don't want that in it at all.
I love to cook! Especially in the cooler months. I have found myself changing alot of recipes to be crockpot or ones that simmer in the oven for several hours. This way I get to spend more time with my family, and we get to enjoy a nice delicious warm meal, without the hassle!!
I don't add as much salt if any and I use recipes if they call for cream cheese I use the 1/3 less fat in the place of regular cream cheese. The same goes for sweetened condensed milk and evaporated milk I get the less fat versions.

We eat a lot of soups in the fall and I always adapt the recipe by adding more liquid so I can make the pot of soup early and then sit it on our wood stove to simmer all day. Saves energy, folks can grab a bowl whenever they are hungry, and it tastes yummier that way!

My favorite fall recipe is chili and I have adapted it to better fit my more healthy lifestyle by removing the meat and either using lean turkey or bulking it up with three types of beans (pinto, black, and kidney). It still tastes fantastic and is rich in protein and fiber.
I've lightened up my Mom's sweet potato casserole so it doesn't feel too indulgent to dig into!

A new fall tradition that I've just declared is to make soup once a week. I'm sure many do this, but it's been new to me - so I make a copycat of Olive Garden's Zuppa Tuscana or a homemade Clam Chowder or Chicken Chili once a week. As a bonus, I also make homemade french bread to go with it. It makes us love fall!
I use Land O' Lakes in everything I cook, eat, etc., If I run out of it, it puts me in total shut down mode! I can not operate in the kitchen without it!
Fall is also soup-making season for me! Love the recipe above; I really try to make a batch of soup over the weekend, and then use it for lunch for my week at work!
I'm definitely going to try this soup. I always look forward to turkey tortellini soup my husband makes from the Thanksgiving turkey leftovers. He's makes great soups from scratch!

Hi! I LOVE LOVE LOVE Land O Lakes butter and have only used for many years. Butter is better in all ways, especially taste! I am retired and have been cooking more now and love it! Today I peeled hard boiled eggs off the ceiling! LOL really a long long story! I crack myself up! Home cooking, nothing like it, the love the fun the laughs, just me and my three pups! HA

I enjoy my time in the kitchen and make most of our meais from scratch and freeze them for later meais ....including soups, sauces, broths, doughs. Healthier! (I do not like preservatives.)

My husband and I love pumpkin: At the moment, we have 93 small pie pumpkins and winter squash of various types stashed away in our garage for winter meals. In my family, pumpkin is treated as a sweet, in his a savory. In an effort to eat a healthier diet, we've adapted our family recipes to suit our own tastes and schedules. We bake small pumpkins whole for about an hour at 350, tear out the top, scoop out the seeds, split fruit in half, and use as a palette. Sometimes, we saute a small amount of fresh sage in butter, pour over pumpkin, and serve. Another good offering is to grate your favorite cheese over the top (we like Gouda), broil, and serve. Baking pumpkins whole greatly simplifies prep time. Wash, place on an ungreased baking sheet, and bake 'til fork tender. And because pumpkins are naturally sweet, a little butter and cinnamon and/or nutmeg makes a tasty dessert.

My favorite fall foods are soups and stews which I've adapted to the pressure cooker. Saves me precious time and allows for a home cooked meal on busy weekdays and even on the weekends. I also use the bread machine in order to have fresh bread to go with soups/stews. Without this cooking method I wouldn't be able to take the time to make our favorites like: beef stew with mushrooms or black bean and sour cream. Pressure cooking cuts down a lengthy several hour process to a half hour or less.
I adapted beef stew. I put more of a variety of veggies so I can get more nutrients.
I love soups and chilis. In the fall especially. So I adapt most stove-top recipes for my Slow Cooker so (a) it's ready when I get home in the afternoon, and (b) the house smells wonderful all day long.

I love my soup in the fall and winter. Favorite soup is cream of broccoli. I also love making chili in the fall using ground turkey.
Mulled wine is a great tradition for the adults in my family! It's delicious and very festive for the fall holidays! Most importantly it's not hard to make!
After our really hot summers I can't wait for Fall. That's when I bring out all my soup recipes. Nothing beats hot homemade soup on a chilly fall day.
I like to make chili but lately I've been using half ground beef and half ground beef trying to eat just a little bit healthier. Just a bit. Thanks!

I love chili this time of the year and i learn to make it with ground turkey and to be honest i love it more.
I use less salt and more Spanish seasonings like Sazon Goya on my turkey.
