How to Master That Breakfast Habit: Make it Ahead!

Breakfast Muffins
Earlier this month Denise urged Blogher readers to Resolve to Eat Breakfast. Even though I confess I was well into my forties before I mastered the breakfast habit, I was surprised at the number of comments from people who confessed that they rarely (if ever) eat breakfast. Everyone knows they *should* eat breakfast, many people just don't manage to fit it into their busy morning routine.

What's needed to master the breakfast habit are things you can make on the weekend, then grab, heat if needed, and eat during the week. If you can find two or three tasty breakfast options like this, you can rotate them so you don't get bored, and your days with no breakfast are over. Everyone has their own idea of what's good for breakfast, but luckily there's no shortage of nutritious and delicious make-ahead breakfast options.

Thanks for the great post Kalyn. Although I am now a complete convert to the breakfast club, it did take a while for me to make sure I never missed it. Now I always make time, and I find skipping breakfast leaves me feeling tired and lacking concentration. Also so important to kick-start the metabolism first thing! Thanks for a great round-up - I'll be trying out some of those recipes for sure.

Mini Crustless Tofu Quiches ( http://blog.fatfreevegan.com/2006/12/mini-crustles... ) are baked in a muffin pan (like your egg muffins) and can be made ahead.

Not make-ahead, but Vegan Omelette for One ( http://blog.fatfreevegan.com/2007/09/vegan-omelett... ) is probably the most popular recipe on my blog. People claim they've fooled their relatives into thinking it's made of egg (it's tofu). I don't advise tricking people, but some people enjoy that! It's quick to make and I have it a couple of times a week myself.

I finally decided that vegans can eat more than bars, muffins, or oatmeal for breakfast. It took me a long time to figure out what, but I finally came up with some egg-like, high-protein options, including mini-quiches that you can make ahead and reheat (or eat cold). Just wanted to mention that in case some vegans come looking for breakfast ideas.
