I have come out; I am fat, and menopausal to boot! After years of hiding that I am an addict to food, though not to be confused with a “food binger,” but a true Foodie that LOVES food, I throw in the towel and here-and-now will admit to finally losing the battle in my attempt at weight loss. It has been most exhausting; and so much time and energy wasted.
I can no longer hide who and what I am. Telling the truth; I am liberated…for the truth has indeed set me free! I am a proud Foodie, who loves to spend many leisurely hours in the kitchen, cooking and eating, and as well delighted to share with others—feeding them my heart’s creations—my labor of love.
At 54 years of age, I am certainly not going to participate in a beauty pageant, nor am I going to the beach with a two-piece bathing suit. I’ve had my day; I’ve been there and done that: the bikinis, the miniskirts, the tight pants. And I certainly caught a few wayward eyes and turned many a heads then.
I’ve had my fill of trying; I would now just like to grow old, gracefully, if you please!
With some dignity still left, and my youth very far behind me, I would like to fulfill the next stage of my life, without struggles and denials. I am a happy wife; I am a proud mother of three; and I am ever-thrilled to be a bragging grandma of two boisterous little boys.
I will continue to exercise, eat healthy, and try to live as contented as possible. If along the way I happen to lose a few [unwanted and unneeded pounds] I will joyfully share the news will all!

Buttermilk and Brown-Sugar Sourdough Pancakes
This pancake recipe makes about 16 8-inch pancakes (very rich and very filling!).
Steps 1:
{To make these pancakes you will need to have ready one starter recipe for “Buttermilk and Brown-Sugar Sourdough.” The sourdough starter takes is a 10-day cycle to be ready for use.}

1 cup heavy-cream
1/2 cup buttermilk
1/2 cup sour-cream
2 cups [buttermilk and brown-sugar sourdough] starter
1/4 golden-brown sugar (packed)
3 extra-large eggs (jumbos preferred)
2 tablespoons vanilla
3 cups buttermilk pancake mix (Bisquick preferred)
1/4 cup Cultured Buttermilk Blend for Baking and Cooking
1/2 cup Orange Juice concentrate (defrosted), undiluted
In a suitable size bowl add the heavy-cream, sour-cream, starter, brown sugar, eggs and vanilla. Beat on low till everything is well blended. To the starter mixture add the pancake mix and cultured buttermilk powder. Beat till just blended. Do not overbeat. Stir in undiluted orange juice, blend well; allow batter rest on counter for about 30 minutes before cooking.
Steps 2:
Note: Very tender pancakes; rather difficult to flip over.
On a hot griddle over medium heat, place about 1/2 tablespoon butter to melt, when sizzling add about 1/2 cup of pancake batter. Turn when edges seem to start firming and browning and bubbles start to form throughout pancake (though you will NOT see as many bubbles as in a regular pancake batter).
In flipping the pancake; use a deliberate, swift motion to slide a wide spatula under the pancake. This is difficult because the pancake is so tender that it can very easily break.
