Campobello Chicken Casserole
This is sooo good, especially on a chilly evening.
1 - 10 oz. package frozen broccoli
2 cups cooked diced chicken
1 can chream of chicken soup (I use fat free)
1/2 cup mayonnaise (I use a little more, hence the ff soup)
1/2 teaspoon curry powder
1 teaspoon lemon juice
grated cheddar cheese
herb seasoned bread stuffing mix
Spray the bottom and sides of a 9x9 casserole dish with non-stick cooking spray. Heat the broccoli in microwave until it's thawed and place it in the bottom of the casserole dish. Place the cooked chicken on top of the broccoli. Mix the soup, mayo, curry and lemon juice well and spread over the chicken. Top with grated cheese and stuffing mix. Bake, uncovered at 350 degrees for 25 minutes.
I serve this with hot buttered rice. Hope you like it!
