[Irish Boiled cabbage and ham] Traditional Irish comfort food - Great recipe to use leftover ham

An Irish friend of mine gave me this recipe.
Ireland is one of the countries I've never visited so far. :(
I've traveled over 30 countries in my life, but I've never had a chance to go to Ireland.... :( I dream of visiting the country of Guinness and Celtic Woman some day. :)
My friend said that this Irish Boiled cabbaage and ham/bacon is the one food you could find at any restaurant in Dublin. I love all kinds of different food, including ethnic ones. As soon as I saw this boiled ham and cabbage she brought for lunch, I knew that I liked it :)
And I had leftover ham from Easter, which I threw in the freezer. This very Irish recipe seems like a saviour of my ham. And it was, indeed.
The traditional dish consists of unsliced back bacon boiled with cabbage and potatoes. Smoked bacon or ham is used too.
I am pretty sure this is one of the easiest recipe ever I tested. :)
Here goes the recipe.
1+1/2 lbs smoked ham (I used leftover ham. That's why it's already sliced. If you are buying ham for this, buy a bone-in ham)
1 large onion 2-3 carrots, peeled
3-4 potatoes, peeled
1/2 teaspoon dried thyme
1/2 head cabbage, cut into quarters
1 tablespoon whole peppercorn
2 whole bay leaves
4 cups chicken broth (I used the broth from ham bone) - Optional
How to make:
1. Rinse and cut cabbage into wedges.
2. Place cabbage in a large pot along with garlic cloves, onions and quartered potatoes and carrots. Just cover vegetables with broth and/or water(if you needed); add bay leaves and peppercorns. Put peppercorns and bay leaves in a cheese cloth for easy removal after cooking. I didn't and it was so hard to remove peppercorns one by one. :(
3. Put ham into the pot. Bring to boil, lower heat to low and allow to simmer for 30 minutes.
4. Bring to boil, lower heat to low and allow to simmer for 3-40 minutes before serving ham and vegetables, coated with broth or not.
5. Fill the plate with ham with the cabbage, carrots, and potatoes.
It's very tasty! You don't even need to season. Seasoning is already enough, only with cured ham. Enjoy!
