It's Raining...It's Pouring...Time for Soup!

It's in Biblical Proportions, here in the New River Valley!  The weekend's awesome spring like weather is now lost in the memories of a weekend spent with my husband walking along the banks of the New River as we soaked up some Vitamin D and Alyson played with sticks (her favorite toy).  Sigh.....

Wait, what am I doing poutin' because it's raining? January...long, slow, cold rain = SOUP DAY! Woohoo!!!!  Yessssssss, I am bustin' out my slow cooker and throwin' some veggies in the pot for a nice bowl of Veggie Soup...Po' folk style!

Throw it in the pot - Vegetable Beef Soup

  • In a large slow cooker add 1 lb browned, ground beef (seasoned to taste with salt and pepper)
  • Add  cups beef broth
  • Add 8 oz Tomatoe Juice
  • Dice/chop 3 cups of your favorite veggies (I'm more of "if it's left overs, throw it in" kinda girl) and add to the slow cooker
  • Seasoning:  2 bay leaves, 1 clove garlic (mashed & finely chopped), 1/2 tsp onion powder, 1 tbsp Worcestershire Sauce,
  • 1 cup brown rice, uncooked - add to slow cooker in the last 30 minutes of cooking

Let everything just kinda hang out in the slow cooker for 3-4 hours on medium, adding the rice in the last 30 minutes of cooking. 

Ladle into a bowl and top with your favorite cracker, cruton, or when eaten while curled up in your favorite blanket and reading your favorite book.
