Kelsey Cooks: Chicken souvlaki wraps

This is such an easy and delicious recipe. It does take marinating, but it’s quick, simple, and with ingredients you (most likely) have on hand.

Eric and I have been eating a dinner of chicken/fish with rice/noodles and a veggie side for the better part of two weeks. I was craving something with a bolder flavor when I remembered this recipe I’ve been cooking for years.

Since I didn’t have every ingredient on hand, and was making less servings, I adjusted the recipe (shown below).

Chicken Souvlaki Gyro-Style

2 boneless, skinless chicken breasts
1/3 cup Kraft Greek with Feta & Oregano salad dressing
1.5 tbsp lemon juice
0.5 tbsp dried oregano
1 small garlic clove, minced
A couple sprinkles of Greek seasoning
Drizzle of olive oil
A few healthy sprinkles of salt and black pepper

Combine all ingredients (except the chicken breasts) in a bowl.

Place the chicken breasts in a bag or dish and pour the marinade on top of them. Leave in the refrigerator for at least 1 hour, up to 24 hours.

Heat a frying pan on high. When hot, place chicken breasts on pan. Let the breasts sear on each side for 1 minute. Reduce heat to medium and cook for another 6-8 minutes.

Let the chicken rest on paper towels for a couple of minutes. Slice the chicken length-wise, place in wraps, and let diners add the toppings they wish. Eric and I used cucumber, lettuce, and a poor man’s tzatziki sauce (sour cream sprinkled with garlic powder).

We’ll be having them again tomorrow and I’m going to add some crumbled bacon and green olives to mine.

What are your favorite easy dinner recipes?
