Kid Approved: Beef Curly Noodle Skillet Dinner

Every now and then I find something that my 6-year-old requests seconds on. She actually SITS DOWN and EATS not one, but two, helpings! Tonight I put together a few ingredients that would satisfy the palates of young and adult alike. The recipe is anything but “fancy” and has just five ingredients including Ramen noodles, ground beef and corn. It is a good solution to night when you need to get a quick meal on the table before heading to the next activity.


Beef Curly Noodle Skillet Dinner

Serves 4


1 lb. browned ground beef

¼ c. chopped onion

1 package (3 oz.) of beef-flavored Oriental Ramen noodles

1 can (14.5 oz.) stewed tomatoes

1 can (15.25 oz) “whole kernel gold and white corn”, drained


1. In a skillet, brown ground beef and onion; drain.

2. Stir in tomatoes, corn, seasoning packet and noodles; mix well. Bring to a boil.

3. Reduce heat; cover and simmer for 10 minutes or until the noodles are tender.

To speed up this meal, I brown ground beef and onion and freeze it in 1 lb. portions. Then I just have to pop it in the microwave to defrost while I prepare the rest of the ingredients. In 15 minutes I have a meal ready to go! I have not tried it but I think Mexicorn would spice up the recipe nicely. Depending on the number of household members I have eating, I usually double the recipe.  It makes great leftovers and heats up nicely for whomever just got home on the bus from some sports event.
