A Lazy Monday Meal Plan, March 4

The weekend went by too quickly and I would like it to come back. Please. Or maybe I just need a nap.
I made the mistake of making my meal plan and then reading a cookbook, which means I wanted to change absolutely everything in my meal plan. I didn't, but I have a feeling I'm going to change my mind about Friday's dinner. Also, I was really, really tired when I made my meal plan so I'm pretty much everything on here is super easy and fast. The only meal that is going to require much time at all is Saturday's.
Monday: Fish cakes and baked beans -- both from the freezer. Score! The fish cakes are made by our local grocery store and we're hoping they are good enough that we'll want to stock up on some more. I'm sure they won't be as good as my mother's, though that's probably in part because she used to fry hers in bacon fat. Mmm bacon fat.
Tuesday: Chicken pot pie -- the one that Lee makes, not the one that I make. ;)
Wednesday: Lentil risotto. At least I think that's what's in that container marked "lentils" in the freezer. If not, whatever is in that container marked "lentils" in the freezer. Ha!
Thursday: Soup and baguette, both from the freezer. I am rocking the freezer meals this week. Probably because I was exhausted when I made my meal plan yesterday.
Friday: Pasta with caramelized onions, spinach and Parmesan. This may change. I'm not sure why but I just think it may change, possibly in favour of pasta with sun-dried tomato pesto.
Saturday: Homemade Ikea-style Swedish meatballs (from Dinner: A Love Story) with mashed potatoes. No, I'm not avoiding Ikea meatballs because of the horse meat thing. I've had horse. It's not my favourite meat but it's not bad. I've been meaning to make these for awhile and the news reminded me of it. ;) The DALS recipe isn't on their website but I also pinned this Swedish meatballs recipe from Sticky, Gooey, Creamy, Chewy awhile back and it's quite similar.
Sunday: Salad roll bowls with shrimp. Lee wanted me to make fresh salad rolls (or fresh spring rolls, or summer rolls, or whatever you happen to call gỏi cuốn) but, again probably because I was really tired when I made the meal plan, I wasn't feeling it. We compromised. We're going to experiment with just putting all the ingredients in bowls like we do with burrito bowls. It'll end up being very similar to when we make bun but not exactly like that.
Extras: Since I'll be buying mint for Sunday's meal, I may make some minty pea dip. We like having something snacky in the house on the weekend and I think this is a good one for us. Hmm but do I want it with fresh bread or with pitas?
