A Versatile Lentil Salad

[Editor's Note: I'm always looking for great legume and/or grain salads to make for dinner, partially because they make such great leftovers for my office lunch the next day! This salad caught my eye and looks quite versatile. In fact, when I was checking out the post, my Mom was visiting, and the photo on the screen caught her eye as she walked bythe recipe got the Mother Seal of Approval just by its picture! -Genie]
Lentil Salad with Shallot Vinaigrette
Fast and easy is the name of the game with this salad, but it definitely tasted like you slaved away. I prefer this salad cold, but it would be great as a warm dish too. I am a huge fan of lentils in general, but when they are cooked al dente and made into a salad, it just works for me on a whole different level.
