Let's Fall in Love -- With Browned Butter

BlogHer Original Post

Life's Ambrosia says it so passionately. "I just discovered browned butter and I think I’m in love. It’s so nutty and delicious that it’s absence from my recipe repertoire for so long is pure blasphemy." Browned butter is one of those 'basic techniques' that every cook should tackle. I've collected ten recipes -- savory and sweet -- all to tempt BlogHers to give brown butter a try!

Simply Recipes shows in photos how the butter changes from sunny yellow to browned-butter brown, see how to brown butter. All it takes? A stick (or less, or more) of butter, a pan and heat.

Other tips from butter browners:

  • Select the right pan -- the light color of a stainless steel pan with a thick bottom works best, a dark pan obscures the color change
  • Watch carefully -- the butter moves from golden to brown (perfect) to black (not so perfect) in a flash
  • Buy enough butter -- it's best to just start over if the butter turns black
  • Use your nose -- as the color changes, the butter's fragrances will turn nutty, there's no missing it!
  • The brown bits -- be sure to scrape them up, they're heavenly

Life's Ambrosia ~ Spaghetti with Browned Butter & Mizithra
"Do you ever have one of those things that once you discover it, you don’t know how you ever lived without it? That just happened to me. I, believe it or not, just discovered browned butter and I think I’m in love. It’s so nutty and delicious that it’s absence from my recipe repertoire for so long is pure blasphemy."

Eating S-F ~ Kabocha Squash Gnocchi with Sage Butter
"... while I gasped at the amount of butter that went into that sage-butter sauce, I certainly wouldn't have cut it down. The gnocchi came out, as I'd hoped. Little tender pillows accented with pieces of squash, and tenderly enveloped in an aromatic butter sauce."

Steamy Kitchen ~ Pan-Fried Pumpkin Gnocchi with Browned Butter Sage
"The brown-butter sage is incredible – it’s a rich recipe, and only a little bit of the fragrant browned butter sage is needed (it’s not meant to be a “sauce”)."

Blue Kitchen ~ Skate Menuiere with Browned Butter & Capers

Southern Grace Gourmet ~ Spinach & Tomato Orzo
"The orzo is lightly browned first in butter and a little garlic. The browned butter gives this dish an addicting flavor you will love."

Dinner with Julie ~ Browned Butter Rosemary Shortbread
"BROWNED BUTTER. Were there ever two words that married so well? Browned butter makes everything better. Since shortbread is a mere vehicle for butter, it makes the perfect candidate for browning. If you’re not familiar, browning the butter caramelizes its natural sugars, intensifying its flavour and giving it a nutty edge."

Andrea's Recipes ~ Popcorn with Brown Butter, Rosemary & Lemon
"The browned butter lends a certain richness while the lemon and our homegrown rosemary brighten the flavor."

Honey & Jam ~ Pumpkin Butter with Brown Butter Glaze
"It’s probably the best pumpkin bread I’ve ever had, so tender and moist. And because I’m sort of obsessed with brown butter right now, I threw together a frosting-like glaze for the top. The bread is great without it, but I think the glaze adds an unexpected element that really brings it to another level, more cake-like. If you glaze it while it’s still warm the brown butter flavor seeps into the bread, it’s heavenly."

Joy the Baker ~ Browned Butter Blueberry Muffins
"These blueberry muffins are (yes) perfect. Straight forward. Simple. Summer. One whole hell of a lot better than the stale coffee shop version… perfect. How often do I say something is perfect? Not often. Fact."

Not Without Salt ~ Browned Butter Blondies
"Rich butterscotch flavor with a deep nuttiness that comes from one of my favorite ingredients – brown butter. They’re chewy and sweet and the perfect partner with all this coffee we have."
