Life's Ambrosia says it so passionately. "I just discovered browned butter and I think I’m in love. It’s so nutty and delicious that it’s absence from my recipe repertoire for so long is pure blasphemy." Browned butter is one of those 'basic techniques' that every cook should tackle. I've collected ten recipes -- savory and sweet -- all to tempt BlogHers to give brown butter a try!
HOW TO BROWN BUTTER
Simply Recipes shows in photos how the butter changes from sunny yellow to browned-butter brown, see how to brown butter. All it takes? A stick (or less, or more) of butter, a pan and heat.
Other tips from butter browners:
- Select the right pan -- the light color of a stainless steel pan with a thick bottom works best, a dark pan obscures the color change
- Watch carefully -- the butter moves from golden to brown (perfect) to black (not so perfect) in a flash
- Buy enough butter -- it's best to just start over if the butter turns black
- Use your nose -- as the color changes, the butter's fragrances will turn nutty, there's no missing it!
- The brown bits -- be sure to scrape them up, they're heavenly
