Lime Chicken Thighs with Chipotle Rice


With the kiddos going back to school, things get crazy!

I got my one daughter back to college.  She is living in her first apartment!  So exciting!!!

Now, I am getting the other one ready for school and still haven't gotten her school supplies.  Really?  I need to get on that.  Anyway, even with just having one left at home in the nest, dinner time is still nutso and I need to serve something quick and delicious.  In comes this fabulous recipe from Hola Jalapeno:

Lime Chicken Thighs and I like it paired with my Chipotle Rice.  



Look at the spices on those thighs!  So flavorful and so easy.  Here's how to make the lime chicken thighs.


Ingredients to make lime chicken:

8 chicken thighs

1 Tbsp lime juice

zest from 1-2 limes

2 Tbsp minced garlic

2 Tbsp olive oil

salt and pepper to taste


Preheat oven to 425 degrees.  Whisk together the lime juice, lime zest, garlic and olive oil.  Rub the mixture onto each chicken thigh.  Place the chicken into a large roasting pan.  Sprinkle with salt and pepper. Roast the chicken for about 25-30 minutes.  Serve with Chipotle Rice. 


Ingredients to make Chipotle Rice:

2 cups Basmati rice

4 cups water

1 tsp salt

2 Tbsp lemon juice (or juice of 1 lime)

2 Tbsp chopped cilantro


Place Basmati rice in a saucepan.  Add the water.  Bring to a boil, then turn heat to low.  Simmer, covered for about 15 minutes or until all water is absorbed.  Place cooked rice into a large serving bowl.  Add the salt and lemon juice.  Fluff the rice.  Sprinkle in the cilantro until mixed evenly.  Serve with the Lime Chicken Thighs.




The chipotle rice has just the right amount of lime flavor to compliment the lime chicken thigh and it all came together in less than an hour.  How's that for a quick and simple weeknight meal?
