Lite Chicken Tortilla Soup

The biggest problem I have with this recipe and my Corn Chowder, is keeping the kids' paws off when they're skulking about for a late-night snack or weekend breakfast. Like most of my dishes, this one is low fat, high in veggie matter, and packed full of vitamins, minerals and fiber.
At only 240 calories per serving, even the daintiest eater can afford to indulge in toppings of a dollop sour cream, shredded cheese, or crumbled multi-grain corn chips - the the Holy Trinity of Tortilla Soup - taking it from the delicious to the sublime. Those ultra healthy sticklers closely watching how many goodies they pile on may still enjoy the "free" sprinkles like cilantro, and sliced scallions.
