Long Beard Turkey Burgers
So here it is, the second entry to my food blog, it's still the first day of 2014, so I have done double the work today, with my http://www.blogher.com/easy-three-cheese-macaroni, and now with my Long Beard Turkey Burgers. :) Now I have to give a background of this turkey, which happened to be the ABSOLUTE steal of the century for me.
My hubby has a weird habit of always checking the prices of turkey and ham at our grocery store, like to the point where when we don't even need them he looks anyways. So, we're at the grocery the other day with a friend of ours, and he comes over to the cart holding this massive turkey, smiling like a little kid. I'm thinking what the hell do you need this turkey for, then I see the price tag, $1.67. This turkey is an easy 25lbs, clearly some meat guy either had a rough morning pricing or was just in a spiteful mood, because this gorgeous bird was worth way more that that price. So of course I grab the newfound poultry steal, and place it in our basket, hoping that the store honors the price. We get to the check out, and the cashier rang up our new turkey friend, he noticed the price and of coursehad to have the manager come over, who ended up honoring the price, after taking the price tag off of it and heading to the meat department to have a talk with whoever the poor sap was who was in charge of pricing out the turkeys (I felt kinda bad at this point), but we left and headed home with the deal of the day,
So, hubby butchered the turkey for me, leaving me with a shit ton of meat to figure out recipes for. I love turkey burgers, and I had a few ideas for what I wanted to do with my freezer stocked full of poultry, so this will be turkey recipe number one :)
Long Beard Turkey Burgers!
You will need:
1lb- ground turkey
2tbs- chopped green onion
1/8tsp- freshly ground pepper
1tbs- Major Grey's Mango Chutney
2- carrots, finely chopped
1- small onion, finely chopped
2- stalks of celery, finely chopped
3- tbs olive oil
1tbs- Gator Hammock Swamp Mustar (you can substitute honey mustard, dijon mustard, etc.)
1/2- of a red apple, finely chopped
Next, begin assembling the turkey burgers!!
Ground the turkey (or you can buy that shit, it's up to you) I just happened to have a brontosauras sized whole turkey to use, so I cut those breasts up and ground them up haha.
Add salt and pepper, green onions, and swamp mustard, mix well.
In the meantime, get a medium saucepan filled with the 3tbs of oil and heat over over medium heat, and put the carrots, celery, onion and apple in, saute until the onions are translucent, about 10 minutes, remove from heat.
Now, get an oiled grill pan, or an oiled grill, heated to medium heat.
Slowly add the carrot/celery/apple/onion mixture to the ground turkey mixture, you don't want the onion mixture to cook the turkey, so do this slowly. Mix everything together and make your turkey burgers, place them on the grill pan or grill and cook thoroughly, this takes between 5-6 minutes on each side of the burger depending on how thick you made them.
We topped ours with fresh mozzarella cheese and put them on toast, they would be great with swiss cheese on a wheat bun also :) If you're on the carb free route, they are awesome and juicy all by themselves too!
