Would you consider kiwi to be an exotic fruit?  Maybe it’s the fact that I haven’t had one in years, or that they are often displayed in a tiny obscure corner in the grocery store, near the pineapples and mangoes.  I remember running across the street to the public garden in the park and picking these delicious green fruits and making “cakes” and “salads” to share with our friends.  That was in Japan (Navy family), and the juicy fruits and berries became one of my favorite memories.  There was also an amazingly huge cherry tree!

Anyway, back to the point.  When I think of smoothies, kiwifruits almost never come to mind, and I have no idea why!  They should absolutely be allowed in the spotlight, if not for their nutritional value, alone!  Kiwis have so much vitamin C it borders disbelieve.  The ones I picked up yesterday have 240% of your daily intake of vitamin C in just one serving (2 fruits)!  That is awesome!  You don’t really like those rabbit-food-tasting pills anyway, do you??  I find it so much more fun getting our vitamins primarily from the foods we eat.

In honor of St. Patrick’s Day, I thought I’d share my recipe for a tasty and refreshing green smoothie.  Hubby thought there was Bailey’s in it, considering the name, but no sir, this one is all wholesome goodness.  Bubba loved it, and downed a whole glass in minutes.  It’s not too sweet, which makes it great for everyone.  Oh, and I’d love to say that I put some Irish magic into the mix, but the name really comes from the green color :-)   Do you think I’ll get pinched if I sip one of these all day?  We’ll see!

"Luck O' The Irish" Kiwifruit Smoothie

Ingredients:

1 1/2 frozen bananas, peeled

2 kiwifruit, peeled

1 handful fresh baby spinach

1 13.5 fl oz can coconut milk

Juice from 1/2 small lime

Directions:

1.  Put all ingredients in blender and puree on high until smooth.  Enjoy!
