Macaroni Salad 3

Ingredients:

16 oz Elbow pasta
1 C mayonnaise
1 large cucumber, diced
1/2 red onion, diced
4 boiled eggs, diced
1 celery stalk, diced
1/4 C sweet relish or salad cubes
1 tsp dry mustard powder
1 Tbsp dill
salt and pepper

Directions:

1. In a large pot bring water to a boil, add salt and elbow pasta. Boil according to package directions.

2. In a large bowl combine the cucumber, onion, eggs, celery, relish, mustard powder and dill. Stir to combine and set aside.

3. Once the elbows are done, drain and add to the cucumber mixture. Adjust mayonnaise and seasonings if needed, and salt and pepper to taste.

Refrigerate 3-4 hours before serving or you can always make this the night before!
