Meal Plan and Holiday Baking Panic Monday December 19

Do you realize that the holidays are THIS WEEK? I am not ready. By which I mean, my kitchen is not ready. I am sure that somewhere under that piles of stuff there is a kitchen table. I'm sure that if I tried really hard I *could* get the holiday goodies made. I might need to scale back a bit though because that list I mentioned last week? I haven't made any of it.

Cookies and Egg NogSo the question is, do I scale down or do I push it and get it done? I haven't decided yet. (It would, perhaps, be an easier decision if it didnt' feel like my sinuses were eating my face - I call them zombie sinuses.) I need to make Denise's mint sugar cookies because it's tradition. I've been doing it for um... 5? 6? years now. I was a bit thrown because the last few years we've made them when we bought our tree but we bought a fake tree this year instead of a real one and well it was just different.

So baking, I must decide quickly. Luckily I do work from home and I have a laptop so I'm able to work from the kitchen. I can pop up and make a batch of cookie dough in about the same amount of time as a standard office break. Very helpful this time of year!

But I'm kinda stumped on what to make for dinner most of the week. I'm sneaking Monday on to this week's

Monday: My original plan was to have leftovers of last night's meatballs but the fake husband was a step ahead of me and put the leftovers in the freezer. So I'm pulling out different leftovers and we'll have those tonight.

Tuesday: Flank steak and sweet potatoes. I was tempted to make latkes but I just don't think I have the time.

Wednesday: I need to investigate but I'm hoping we have some pork chops in the freezer. If not I know we have some elk sausages.

Thursday: Something simple like pasta.

Friday: Clear stuff the fridge to make room for everything we need for Christmas dinner day. If there's nothing that needs to be cleared out then a frozen pizza.

Saturday: Traditional Christmas Eve dinner of Chinese take-out.

Sunday: Christmas dinner, which for us is very similar to American Thanksgiving dinner. Turkey, mashed potatoes, glazed carrots, mashed sweet potatoes with orange and ginger, green beans (assuming I remember to cook them, I usually forget), stuffing, rolls (maybe homemade, maybe not), homemade cranberry sauce, gravy, and mashed turnip for my MIL if I remember it (I forgot last year, oops). Dessert - plum pudding, cookies and I'm hoping to make a pie.

Everyone's menu's sound so good! I still have to bake - serious amounts of cookies and bread. Ugh! Slow and steady. Slow and steady.

Monday: Leftover soup - from braised pork loin, roasted veggies and wild rice

Tuesday: grilled chicken over pasta with pesto and peas

Wednesday: Not sure, actually

Thursday: Tomato soup and grilled cheese

Friday: Pizza

Saturday: I have to bring meatballs, shrimp, and a veggie platter

Sunday: Breakfast, which I will only help cook, dinner is going to be a rib roast, baked potatoes, Parker House rolls, roasted brussels sprouts, cheesecake

Laine Griffin What kind of meatballs? We tend toward sweet and sour meatballs during the holidays in this house. (We made ours last night.) I am the only person who likes cheesecake so I've given up on buying/making it during the holidays.

Cranberry! They are super yummy. And I saved my huge amount of leftover homemade cranberry sauce from Thanksgiving. WIN! sassymonkey

Laine Griffin Oh! I pinned a recipe for cranberry turkey meatballs last week. I'm thinking it's a good January recipe if we have enough leftover cranberry sauce. (My BIL loves the stuff and could eat it out of the bowl on its own. lol)

Thursday: Hearty Beef Stew

Friday: Lasagna Soup

Saturday: Turkey, homemade pierogies, normal Christmas Eve stuff.

Sunday: Don't know, don't care, not my job!

sassymonkeyJennaHatfield Our farmer's market on Whyte has a great spot where you can buy homemade cabbage rolls and pierogies. Now, I think I need to make a stop there on Saturday morning...I want some too!

Hubby is finishing his exams this week, the kids have their Christmas Concerts, and my Mom arrives which means I have to do a dust bunny removal under all furniture. I did get alot of baking done this weekend and have only a few things left to finish off.

Monday Falafels and salad

Tuesday Pasta and Salad

Wednesday Beef stew with Biscuits

Thursday Lasagna and salad

Friday Pizza Night

Saturday We always have salmon in white sayce on Christmas Eve with mashed potatoes and green beans

Sunday Brunch involves french toast, bacon, lots of fresh fruit, and Irish coffee. Christmas dinner involves all of the good stuff plus the argument with my Mom over who will roast the turkey. I might win this year ;)

victorias_view Yay to exams being done! I remember I once had an exam schedule that had me double-booked for exams from 2-5 on December 22. So I had to go to a special room and stay there ALL DAY. I wrote one exam at 9, the second one at 2 and I wasn't allowed to leave the room until an hour after the second exam started. I had to bring a lunch and if I went to the bathroom I had to be escorted. It was so NOT awesome.

My mother would be thrilled to give up turkey roasting responsibility. But she doesn't spend Christmas with us. lol And drat, Christmas breakfast/brunch. I need to figure out that out don't I? Hmmm maybe cinnamon rolls.

sassymonkey Hurray! He is looking forward to it! There is nothing worse then be being doubled booked on exam day. Yuk! I couldn't imagine having being escorted to the bathroom. LOL!

My Mom has away of making a very dry turkey. But she loves to do it! Oh!I forgot to add sticky buns to the list. I usually make them the night before and throw them in the oven as soon as we get up. It's a nice treat before opening the presents :)

victorias_view Growing up we always ate well, it was Christmas lunch rather than Christmas dinner. So we didn't have a real breakfast. But the fake husband (and my in-laws) do midnight mass (well, I do too but they are Catholic and I am not) and I am not getting up super early so we can eat early. That would make for a Cranky Christmas Karen. So I'm still adjusting to Christmas breakfast/brunch. I was thinking maybe mini-quiches but we're not big quiche people to begin with. But cinnamon rolls... I think that would be doable.

sassymonkey We go to the Children's mass in the evening and the kids are usually up by six in the morning. If we are lucky :) I use to love going to church at the early mass on Christmas morning. It was always very quiet and solemn with no choir or parades. It was just very peaceful.

Cinnamon roles are very doable! I actually am craving one now...

victorias_view I'm not sure which church we're going to this year. We went to my in-laws one year and then the fake husband's the next year and then last year we went to my in-laws new church (they switched) which was the fake husband's old church before he switched. lol I think we're going to the in-law's new church, which is a really, really nice stone church on a hill. It's exactly what a church should be.

I have a pretty easy week this week. As in, I'm only cooking 2, maybe 3 dinners. The past few weeks have been OMG CRAZY STRESSFUL so the fact that I am thisclose to finishing everything for Christmas is such a relief and means I can actually relax and enjoy the holidays.

As far as holiday baking goes, I just have to make the tart shells for my mincemeat tarts. The filling's already been made, so I just really need to throw the filling into homemade tart shells and throw them in the oven. Then it's all done!

Monday: pasta, to use up all the leftover veggies and such in my fridge

Tuesday: chickpea patties with a tomato and cucumber salsa.... found a recipe in a cookbook, and it sounds like a cross between crab cakes and falafels.

Wednesday: out for dinner with a friend. This is, coincidentally my last day of work too, so my last dinner that I would have had to really worry about making.

Thursday: in Toronto with the bf. We're not sure whether we're going to his parents on Thursday or Friday yet, so we may need to make something for dinner. If we do, it'll probably be something easy like a stir fry.

Friday & Saturday: at the bf's parent's place. Not sure what either will entail.

Sunday: Christmas dinner at my parent's place. The only thing I have to make/bring is desserts.

And Karen? That's a crazy long list of baking that needs to be done for you, so maybe you should cut back just a smidgeon, haha.

I managed to go to the grocery store yesterday and get everything I needed to make a cheese ball...except the cheese. I'm hoping the rest of my holiday cooking and baking goes more smoothly.

Sometime this week I'm planning on making gingerbread cutout cookies, just because I'm in the mood for them.

For Christmas Eve dinner I'm making enchiladas and Mexican rice. Dessert will be a Harvey Wallbanger cake from an old recipe of my grandmother's.

My contribution to Christmas dinner will be pomegranate salsa, Pioneer Woman's pot roast, baked brie with pecans and brown sugar, and maybe some dinner rolls.

Celeste Lindell Gah! Cheese ball. I was going to make one. The fake husband saw them in a flyer and wanted to buy one but I mentioned we have everything we need to make one.

I love the idea of enchiladas for Christmas Eve dinner. But I'd have to make them. I've become rather attached to our Chinese take-out and non-cooking Christmas Eve tradition.

sassymonkey I strongly considered a restaurant meal for Christmas Eve because it's just me, my husband and my dad, but decided that it might be more economical to go ahead and cook.

Celeste Lindell We buy the combo for three people and feed four. ;-) I do a lot of the dinner prep for Christmas dinner on Christmas Eve so I'm already spending most of the night in the kitchen anyway.

Nope. That would make sense. A fire and melt down where the coil turns. The appliance guys says it was probably just a weak spot. A bit scary when flames were shooting out of the oven at 7 am!
